The Year of Rabbit special release is made from select brewing batches that have undergone the most strict artisanal production. The rice was milled to 50%, meaning only the inner half of each grain was used to brew the ensuing sake, and the fermentations were elongated and kept very cool to retain all of the gentle aromatics possible. This has led to an extremely elegant result, bursting forward with refined fruit flavours and floral aromas. Special gold flakes are added into the bottle as a wish for all the best in the new year.
