2023 Chablis, Domaine 47°N 3°E, Guillaume Michaut, Burgundy

This is from a parcel of vines planted by three generations of Guillaume’s family, from Guillaume himself back to his grandfather. Made in stainless-steel tank with 10 months on fine lees, this has a cool, mineral feel that will please Chablis purists. It’s zesty, fresh and crisp, with classic iodine and oyster-shell notes on the finish – and a dry grip that calls out for fresh shellfish.
